“Pohash”
A Savory Breakfast Delight
Serves 2
NOTES:
If your Pitta is high then eat this as a treat once and awhile. You can also reduce the onions and chillies to make it less spicy.
Pearl onions, shallots, green thai chilies and baby tomatoes are easier on the system then their counterparts.
You can substitute yam/sweet potato with the zucchini to change things up! Or any veggie that you like! Have fun with it!
Ingredients
If you don’t have all of the ingredients it’s ok! Make your own version and enjoy.
2 cups Organic Poha
1-2 fresh green thai chillies
1 medium shallot or 5 pearl onions
6 curry leaves
6 baby tomatoes
1 zucchini
1/4 teaspoon mustard seed
¼ teaspoon kalonji seed
2 tablespoons ghee or coconut oil
½ teaspoon turmeric powder
½ teaspoon coriander powder
1 avocado
½ lime
½ cup cilantro
Salt and pepper to taste
Instructions
In a medium pan heat ghee or coconut oil on medium heat.
Add green chilies whole (take stems off and do not cut)
Peel shallots or pearl onions. Chop coarsely and add.
Add curry leaves, mustard seeds, coriander powder and kalonji seeds.
Sautee all of these ingredients while you rinse the Poha in a mesh strainer. Rinse Poha once thoroughly and let sit.
Chop zucchini into ¼” cubes and add to the pan.
Saute until zucchini is medium soft.
Add poha and turmeric.
Gently stir all of the ingredients in the pan to thoroughly mix and heat the Poha for a couple of minutes.
Add the baby tomatoes for the last 2 minutes. They can be whole or sliced in half.
Serve with fresh cilantro, half sliced avocado, squeeze of lime and season to taste with salt and pepper!
Amaranth Porridge
Increase Your Ojas!
Serves 2
NOTES:
Amaranth is high in minerals. It increases Ojas (immunity and strength). It’s an appetite suppressant so it will fill you up and you won’t feel the urge to snack between meals.
Ingredients
1 cup amaranth
3 cups water
2 dates
Pinch of salt
Dash of cinnamon, cardamom, nutmeg and clove
Can be cooked into the porridge
Organic goji berries
Organic raisins
Organic, raw walnuts
Berries or peeled apple or pear
Instructions
This recipe can be made in the VitaClay or on the stove top.
Combine the amaranth and water in a small saucepan, and bring to a boil.
Reduce the heat to low, cover and simmer for 30 minutes.
Stir every once in a while, as the amaranth may stick to the bottom of the pan.
Stir in the syrup, spices and a pinch of salt. Stir vigorously until the porridge is creamy. Remove from the heat and serve.
Breakfast Stew

NOTES:
This is the lightest of all three recipes. It’s a wonderful meal to enjoy if you don’t have a very strong appetite in the morning. Breakfast is an important meal as it stokes Digestive Fire and sets your ability to completely digest food for the rest of the day. When breakfast is skipped this Digestive Fire can weaken making other meals harder to digest which can create lethargy, foggy mind, gas and bloating.
Ingredients
2 peeled apples or pears or both
3 prunes
Handful of crushed walnuts
1 date
Pinch of cinnamon, cardamom, nutmeg (small pinch)
Instructions
This recipe can be made in the VitaClay or on the stove top.
Peel, de-pit fruit/dried fruit
Add all ingredients with ½ cup water
Cover and cook on medium until fruit is very soft.
Stovetop: ~ 30 minutes
Crockpot: If you have a crock pot this is a great recipe to throw in overnight and cook on low so that it’s ready when you wake up.
VitaClay or Instapot: this can be put on the timer so that it’s ready when you wake up in the am. I use the stew setting for 1 hour.
